ASSISTANT RESTAURANT MANAGERPremium Japanese Sushi Restaurant | Riyadh, Saudi Arabia Position Overview:We are seeking a dynamic and experienced Assistant Restaurant Manager to support our premium Japanese sushi dining establishment in Riyadh. This role is crucial in ensuring exceptional guest experiences, maintaining the highest standards of Japanese cuisine presentation, and supporting smooth daily operations in our modern, fast-paced environment. KEY RESPONSIBILITIES:Operational Management:Assist in overseeing daily restaurant operations including opening and closing procedures Support the Restaurant Manager in supervising front-of-house and back-of-house activities Ensure seamless coordination between service staff and sushi chefs during all service periods Monitor food quality, presentation standards, and authentic Japanese preparation techniques Maintain compliance with all health, safety, and food handling regulations as per Saudi Arabian laws Oversee proper storage and handling of fresh seafood and specialty Japanese ingredients Staff Leadership & Development:Recruit, train, and mentor restaurant staff on service excellence and Japanese dining etiquette Schedule shifts effectively to ensure optimal staffing during peak hours Conduct performance evaluations and provide constructive feedback to team members Lead by example during busy service periods, stepping in where needed Foster a positive, professional work environment that promotes teamwork Handle employee concerns and disciplinary matters in accordance with company policies Customer Service Excellence:Ensure every guest receives exceptional, personalized service Address customer inquiries, feedback, and complaints promptly and professionally Greet and seat guests, especially VIP customers and regulars Monitor dining room atmosphere and ensure guest comfort throughout their experience Implement service recovery procedures when necessary Inventory & Supply Chain Management:Oversee ordering of fresh seafood, specialty Japanese ingredients, and supplies Manage inventory levels to minimize waste while ensuring ingredient freshness Coordinate with suppliers to ensure timely delivery and quality standards Monitor stock of kitchen utensils, equipment, tableware, and takeaway packaging Implement cost-control measures without compromising quality Financial & Administrative Duties:Assist with budgeting, expense tracking, and cost management Process payroll accurately and in a timely manner Balance cash registers and manage POS system operations Monitor sales performance and identify revenue growth opportunities Maintain accurate records of income, expenses, and daily transactions Support promotional events and marketing initiatives Quality & Standards Compliance:Ensure adherence to all restaurant policies, procedures, and standards Maintain cleanliness and hygiene standards throughout all areas Oversee compliance with Saudi food safety regulations and licensing requirements Implement and monitor quality control procedures for sushi preparation Ensure proper presentation of signature dishes and specialty items REQUIRED QUALIFICATIONS:Education:High school diploma or equivalent (required) Bachelor's degree in Hospitality Management, Business Administration, or related field (preferred) Food Handler's certification and relevant Saudi food safety certifications Experience:Minimum 3-5 years of experience in restaurant management or supervisory roles At least 1-2 years in an assistant manager or senior supervisor position Previous experience in Japanese, Asian, or fine dining establishments strongly preferred Experience working in Saudi Arabia or GCC region is highly advantageous Proven track record in high-volume, upscale restaurant environments Skills & Competencies:Leadership & Management:Strong leadership abilities with proven team management skills Ability to motivate, coach, and develop diverse teams Conflict resolution and problem-solving capabilities Decision-making skills under pressure Technical Skills:Proficiency in POS systems (Oracle Simphony or similar) Knowledge of restaurant management software and reservation systems Familiarity with inventory management tools Strong computer skills (MS Office: Excel, Word, Outlook) Understanding of restaurant budgeting and P&L management Operational Knowledge:Deep understanding of restaurant operations and workflow Knowledge of Japanese cuisine, sushi preparation standards, and presentation Familiarity with food safety, HACCP, and hygiene protocols Understanding of Saudi labor laws and regulations Customer Service:Exceptional customer service orientation Professional and polished communication skills Ability to handle difficult situations with grace and diplomacy Guest-centric mindset with attention to detail Language Requirements:Fluent in English (spoken and written) -
