Pastry & Bakery Operation Manager

Oversee accurate inventory counts across both locations and conduct regular recounts/audits to minimize discrepancies and waste

Monitor stock levels, ordering, and storage practices to control food cost

Track and analyze sales performance across both branches, identifying trends and opportunities

Evaluate menu item performance (best sellers, slow movers, profitability) and recommend adjustments to pricing, mix, or promotions

Leverage a pastry chef background to maintain and refine recipes, ensuring consistency and quality across both locations

Standardize recipes and preparation methods so output is identical regardless of branch

Redesign and streamline preparation workflows so item prep time does not exceed a maximum of 20 minutes

Plan staffing, prep schedules, and kitchen workflow around this efficiency target

Create, document, and implement Standard Operating Procedures (SOPs) covering kitchen operations, food safety, inventory, and customer service

Ensure SOPs are consistently followed across both locations

Lead and support teams across two locations, ensuring consistent standards, culture, and performance

Act as the operational backbone for future location expansions, building scalable processes and structures

Apply strong understanding of business model and workflow to improve overall efficiency and profitability

Bring a management mindset to daily decisions — balancing quality, cost, speed, and team performance

Proven background as a Bakery/Pastry Chef, with hands-on product knowledge

Prior experience in operation management or multi-location leadership role

Strong understanding of inventory management, sales analysis, and menu engineering

Experience creating and implementing SOPs

Solid grasp of business workflows and operating models within F&B/bakery settings

Demonstrated ability to reduce preparation times and improve kitchen efficiency

Strong leadership skills with the ability to manage teams across multiple sites

Willingness and readiness to support future branch expansions

Comfortable traveling between Riyadh and Jeddah as needed
